Holy Crap Cookies

Make these healthy cookies using Holy Crap Plus Oats cereal and adding a few other wholesome ingredients. These fibre and protein-rich cookies are chewy and dense with just a touch of sweetness and will give you lasting energy. Be creative with some of the optional ingredients and create your own favourites. You can easily double and triple the recipe. They freeze well too!

Ingredients

  • 1 bag Holy Crap Plus Oats or Holy Crap*
  • 3 ripe bananas
  • 1/4 cup walnuts, chopped
  • 1 Tbs coconut oil, melted
  • 1 apple, grated
  • 1/4 tsp salt
  • *If you are using original Holy Crap cereal, add 1 cup of quick cooking oats

Optional ingredients

  • Spices like cardamom, ginger, nutmeg or cloves
  • Extracts such as vanilla, lemon, mint, maple
  • Orange, lemon or lime zest
  • Apple, pear or plum sauce or pumpkin puree in place of all or part of the bananas
  • Different nuts like almonds, pecans, brazil or hazelnuts
  • Nut allergy? Try pumpkin, sunflower, sesame, flax, hemp and chia seeds
  • Add ¼ cup dark chocolate chips or raw cocoa nibs or cocoa powder

Instructions

  • Preheat oven to 350°F.
  • Mash bananas in a large mixing bowl.
  • Stir in remaining ingredients and mix well.
  • Let batter sit for 10 minutes and stir again.
  • Drop by tablespoon onto a parchment paper lined baking sheet.
  • Form and semi-flatten into cookie shape.
  • Bake for 11-13 minutes.
  • Let cool completely before freezing.
