Lentil Salad

Ingredients

Salad Ingredients:

  • 1 can yellow lentils, rinsed and drained
  • 1 red pepper, chopped small
  • 1 cup dried currants
  • 2 green onions, chopped small

Dressing Ingredients:

  • 1/3 cup vegetable oil
  • 1/4 cup red wine vinegar
  • 1 tsp mustard of choice
  • 1 tsp lemon juice
  • 1/2 tsp cinnamon
  • 1/2 tsp cumin
  • 1 tsp curry powder
  • Pinch of cloves
  • Pinch of sugar

Instructions

  • Mix all salad ingredients together in a bowl.
  • In a separate small bowl, whisk dressing ingredients together and pour over salad.
  • Mix well and marinate for 24 hours.

Notes

Will keep for 7 days, refrigerated.
