Spinach, Turmeric and Red Pepper Frittata

- 1 tbsp olive oil or butter
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 cup red pepper, diced
- 1 tsp turmeric
- 6 eggs, lightly beaten
- 1 pacakge (approx.10 oz) frozen chopped spinach, thawed and drained (or 4 cups fresh chopped spinach)
- 1/4 cup fresh parsley, chopped
- 1/4 tsp salt
- 1/4 tsp ground pepper
- pinch ground nutmeg
Preheat oven to 325F.
In an ovenproof skillet, heat oil over low heat. Sauté the onions for 5 minutes. Add peppers, garlic, and turmeric and sauté for another 5 minutes.
In a bowl, beat the eggs. Stir in the cheese (if using), parsley, spinach, and spices.
Pour on top of the pepper mixture.
Bake in 325F oven for 30-35 minutes or until set but still moist in the center.
Serve hot or cold; makes 4 main-course servings.
