- 1 tbsp coconut oil
- 1/2 medium onion, chopped
- 1 1/2 cups red kidney beans, cooked
- 1 1/2 cups black beans, cooked
- 2 bell peppers, chopped
- 1 cup mushrooms, quartered
- 1 zucchini, chopped
- 14 oz can diced tomatoes
- 14 oz can crushed tomatoes
- 2 cloves garlic, minced
- 2 tsp chili powder
- 1 tsp oregano
- 1 tsp cumin
- Salt (to taste)
In a large pot, melt coconut oil over medium heat. Add onions and sauté until they become translucent.
Rinse all the beans and add to the pot.. Add the rest of the ingredients and bring to a gentle simmer, stirring often.
Cook for 30 minutes or until vegetables are tender. Season with salt if necessary.
