Edamame Avocado Dip

Ingredients

  • 1 cup shelled edamame
  • 2 avocados, pitted
  • 1 tsp fresh ginger, grated
  • 1/2 tsp garlic, minced
  • 1/4 cup water
  • 3 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1 tbsp fresh mint, chopped
  • 1/4 tsp wasabi powder (optional)

Instructions

  • Combine all ingredients into a food processor or high powered blender and mix until smooth.
  • Adjust lime juice or salt if needed.
