Ingredients

  • 1 tbsp olive oil or butter
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 cup red pepper, diced
  • 1 tsp turmeric
  • 6 eggs, lightly beaten
  • 1 pacakge  (approx.10 oz) frozen chopped spinach, thawed and drained (or 4 cups fresh chopped spinach)
  • 1/4 cup fresh parsley, chopped
  • 1/4 tsp salt
  • 1/4 tsp ground pepper
  • pinch ground nutmeg

Optional

  • 1/2 cup grated cheese

Instructions

  • Preheat oven to 325F.
  • In an ovenproof skillet, heat oil over low heat. Sauté the onions for 5 minutes. Add peppers, garlic, and turmeric and sauté for another 5 minutes.
  • In a bowl, beat the eggs. Stir in the cheese (if using), parsley, spinach, and spices.
  • Pour on top of the pepper mixture.
  • Bake in 325F oven for 30-35 minutes or until set but still moist in the center.
  • Serve hot or cold; makes 4 main-course servings.
