Ingredients

  • 1/4 cup olive oil
  • 3/4 cup celery, chopped
  • 3/4 cup onion, chopped
  • 1 cup carrot, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable stock
  • 3 cups water
  • 3/4 cup lentils, rinsed
  • 3/4 cup barley, rinsed
  • 1 tsp dried oregano
  • 1 tsp dried rosemary
  • 1/2 tsp fresh ground pepper
  • 1/2 tsp chili flakes
  • 1 jar diced tomatoes (28 oz)

Instructions

  • In a large stock pot, heat oil over medium heat. Add celery, onion, carrot and garlic; stir occasionally for 5 minutes. Add stock, water, lentils, barley, and herbs. Cover and bring to a boil; reduce to simmer and cook for 45 minutes. Add can of tomatoes and simmer for another 15 minutes, stirring occasionally.
