Arugula Walnut Pesto

Here’s a new twist on traditional pesto that is not only delicious and nutritious but can save you money too. Both arugula and walnuts are less expensive than basil and pine nuts and offer wonderful health benefits along with great flavour. And it’s vegan too!

Ingredients

  • 1 cup arugula
  • 1/2 cup walnuts
  • 1/4 cup olive oil
  • 1-2 tsp fresh lemon juice
  • 3 sun-dried tomatoes soaked in water to soften if not oil packed
  • 2 cloves garlic
  • salt & pepper to taste

Instructions

  • Combine all ingredients until smooth in a high-speed blender or food processor.
  • Serve with zucchini spirals, fresh pasta, or cucumber rounds.
