- 2 Bananas
- 3 tbsp Coconut oil Melted
- 2-3 tbsp Maple Syrup or Molasses
- 2 tbsp Ground Flaxseed
- 1 tsp Cinnamon
- 2-3 cups Old Fashioned Rolled Oats
- 1/2 cup Pumpkin Seeds
- 1/2 cup Walnuts Roughly chopped
- Pinch Salt
- 1/2 cup Dried fruit (e.g. raisins, chopped dates, dried apples) Optional
Preheat oven to 325 F
With a blender or immersion blender, blend together the bananas, maple syrup/honey/molasses, andmelted coconut oil until smooth
In a separate bowl, mix together the ground flaxseed, cinnamon, rolled oats, pumpkin seeds, walnuts, and salt
Pour the banana mixture from the blender over the dry ingredients and stir well to combine
Spread the granola ona baking sheet (lined with parchment paper if desired)
Bake granola for 45 minutes until golden, stirring every 15 minutes to draw the crispy edges intoward the middle and break up clumps as desired
After baking but while the granola is still warm, stir in dried fruit if using
Let granola cool completely before storing in an airtight container at room temperature
