Preheat oven to 325degrees.
With a blender orimmersion blender, blend together the bananas, maple syrup/honey/molasses, andmelted coconut oil until smooth
In a separate bowl,mix together the ground flaxseed, cinnamon, rolled oats, pumpkin seeds,walnuts, and salt
Pour the bananamixture from the blender over the dry ingredients and stir well to combine
Spread the granola ona baking sheet (lined with parchment paper if desired)
Bake granola for 45minutes until golden, stirring every 15 minutes to draw the crispy edges intoward the middle and break up clumps as desired
After baking butwhile the granola is still warm, stir in dried fruit if using
Let granola cool completely before storing inan airtight container at room temperature
