Banana Granola

Course: Salads & Sides


  • 2 Bananas
  • 3 tbsp Coconut oil Melted
  • 2-3 tbsp Maple Syrup or Molasses
  • 2 tbsp Ground Flaxseed
  • 1 tsp Cinnamon
  • 2-3 cups Old Fashioned Rolled Oats
  • 1/2 cup Pumpkin Seeds
  • 1/2 cup Walnuts Roughly chopped
  • Pinch Salt
  • 1/2 cup Dried fruit (e.g. raisins, chopped dates, dried apples) Optional


  • Preheat oven to 325degrees.
  • With a blender orimmersion blender, blend together the bananas, maple syrup/honey/molasses, andmelted coconut oil until smooth
  • In a separate bowl,mix together the ground flaxseed, cinnamon, rolled oats, pumpkin seeds,walnuts, and salt
  • Pour the bananamixture from the blender over the dry ingredients and stir well to combine
  • Spread the granola ona baking sheet (lined with parchment paper if desired)
  • Bake granola for 45minutes until golden, stirring every 15 minutes to draw the crispy edges intoward the middle and break up clumps as desired
  • After baking butwhile the granola is still warm, stir in dried fruit if using
  •  Let granola cool completely before storing inan airtight container at room temperature
