Fresh Salsa Cruda
Recipe from Fast Food, Good Food by Dr. Andrew Weil
Servings: 2 cups
- 1/4 cup cilantro leaves, coarsely chopped
- 1 cup chopped tomatoes
- 1/4 cup diced red bell pepper
- 1/4 cup diced red onion
- 1 small jalapeno pepper, seeded and minced
- 2 tbsp lime juice
- Mix all the ingredients in a medium bowl until thoroughly blended.
- Cover and refrigerate until ready to use; may be kept for up to 3 days.
