Golden Overnight Couscous

Ingredients

  • 3/4 cup unsweetened soy milk
  • 1/4 cup dry couscous
  • 2 tbsp tahini
  • 1/2 tsp orange zest
  • 1/4 tsp ground tumeric
  • 1/2 cup unsweetened soy yogurt
  • 1/4 cup pomegranate seeds

Toppings (optional)

  • roasted pistachios
  • fresh mint leaf

Instructions

  • Combine all of the overnight couscous ingredients in a mason jar. Cover and let sit overnight in the fridge.
  • The next morning, add any desired toppings. Enjoy!
