Harvest Chili
Servings: 6 servings
Ingredients
- 1 tbsp coconut oil
- 1/2 medium onion, chopped
- 1 1/2 cups red kidney beans, cooked
- 1 1/2 cups black beans, cooked
- 2 bell peppers, chopped
- 1 cup mushrooms, quartered
- 1 zucchini, chopped
- 14 oz can diced tomatoes
- 14 oz can crushed tomatoes
- 2 cloves garlic, minced
- 2 tsp chili powder
- 1 tsp oregano
- 1 tsp cumin
- Salt (to taste)
Instructions
- In a large pot, melt coconut oil over medium heat. Add onions and sauté until they become translucent.
- Rinse all the beans and add to the pot.. Add the rest of the ingredients and bring to a gentle simmer, stirring often.
- Cook for 30 minutes or until vegetables are tender. Season with salt if necessary.
