Harvest Chili

Ingredients

  • 1 tbsp coconut oil
  • 1/2 medium onion, chopped
  • 1 1/2 cups red kidney beans, cooked
  • 1 1/2 cups black beans, cooked
  • 2 bell peppers, chopped
  • 1 cup mushrooms, quartered
  • 1 zucchini, chopped
  • 14 oz can diced tomatoes
  • 14 oz can crushed tomatoes
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp oregano
  • 1 tsp cumin
  • Salt (to taste)

Instructions

  • In a large pot, melt coconut oil over medium heat. Add onions and sauté until they become translucent.
  • Rinse all the beans and add to the pot.. Add the rest of the ingredients and bring to a gentle simmer, stirring often.
  • Cook for 30 minutes or until vegetables are tender. Season with salt if necessary.
