Almond Ginger Cookies

  • 1 cup Ground Almonds (almond flour)
  • 1 cup Ground Oats(oat flour)
  • 4 tbsp Maple Syrup
  • 2 tbsp Fresh Ginger grated
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/2 cup Pasteurized Egg Whites or 4 large egg whites
  • 1/4 tsp Salt


  • Preheat the oven to 350 degrees F.
  • Mix the ground almonds, oat flour, ground cinnamon and ground ginger in a bowl and set aside.
  • Whisk the egg whites, maple syrup, fresh ginger and sea salt in another bowl.
  • Slowly add the dry ingredient into the wet and mix until combined.
  • Roll out about 1 tablespoon scoops onto a baking sheet lined with parchment paper. Gently flatten each to a ¼ inch thickness.
  • Bake for 15 minutes.
