Arugula Walnut Pesto
Servings: 2 cups
Ingredients
- 1 cup arugula
- 1/2 cup walnuts
- 1/4 cup olive oil
- 1-2 tsp fresh lemon juice
- 3 sun-dried tomatoes soaked in water to soften if not oil packed
- 2 cloves garlic
- salt & pepper to taste
Instructions
- Combine all ingredients until smooth in a high-speed blender or food processor.
- Serve with zucchini spirals, fresh pasta, or cucumber rounds.
