Banana Granola
Ingredients
- 2 Bananas
- 3 tbsp Coconut oil Melted
- 2-3 tbsp Maple Syrup or Molasses
- 2 tbsp Ground Flaxseed
- 1 tsp Cinnamon
- 2-3 cups Old Fashioned Rolled Oats
- 1/2 cup Pumpkin Seeds
- 1/2 cup Walnuts Roughly chopped
- Pinch Salt
- 1/2 cup Dried fruit (e.g. raisins, chopped dates, dried apples) Optional
Instructions
- Preheat oven to 325 F
- With a blender or immersion blender, blend together the bananas, maple syrup/honey/molasses, andmelted coconut oil until smooth
- In a separate bowl, mix together the ground flaxseed, cinnamon, rolled oats, pumpkin seeds, walnuts, and salt
- Pour the banana mixture from the blender over the dry ingredients and stir well to combine
- Spread the granola ona baking sheet (lined with parchment paper if desired)
- Bake granola for 45 minutes until golden, stirring every 15 minutes to draw the crispy edges intoward the middle and break up clumps as desired
- After baking but while the granola is still warm, stir in dried fruit if using
- Let granola cool completely before storing in an airtight container at room temperature
