Chia and Coconut Pudding

A very soothing, nutritious and refreshing dessert, snack or breakfast. Quick, easy to make and portable too! Experiment with the different variations and create your favourite taste combinations.Prep: 5 minutes Soak: 2 hours Serves: 4

Ingredients
- 1 1/2 cups coconut milk
- 1 tbsp maple syrup or honey (or substitute with a few drops of stevia)
- 1 tsp vanilla extract
- 1/3 cup chia seeds
- 1 cup berries of choice
Instructions
- Whisk coconut milk, maple syrup, and extracts until smooth. Stir in chia seeds and mix well. Leave it in the bowl you mixed it in or divide the mixture evenly between 4 glasses. Let sit at room temperature for 2 hours. Serve topped with fruit.
- If you’d like to make the pudding ahead of time, cover it tightly after mixing and chill in the refrigerator. Set pudding out for 15 minutes before serving. Best if eaten within 24 hours but will keep for 2-3 days.
