Coconut Cacao Bites

These healthier snacks are quick and easy to prepare! The fibre in the oats and the healthy fat in the nut butter with help keep your blood sugar levels stable. Cacao* contains antioxidants, flavonoids, and magnesium.Remember that these are an occasional treat, so share them with your family and friends.Prep & Cook Time: 15 minutes Serves: approximately 30-40 bites
Ingredients
- 1 cup rolled oats
- 1 cup shredded coconut
- 1 cup almond butter
- 1/3 cup maple syrup or honey
- 1/4 cup raw cacao powder
- 1/4 cup cacao nibs
- 1 tsp vanilla extract
Instructions
- In a medium-sized mixing bowl, stir together all ingredients until evenly combined.
- Shape into one-inch bites.
- Store in freezer.
Notes
*Cacao, cacao nibs, and cocoa powder all come from the cacao bean. Cacao is the raw, unprocessed form of the bean vs. cocoa, which has been processed and sometimes sweetened. Although cocoa is more affordable, it does lose many of the nutritional benefits through processing. If you are using cocoa powder, choose one where the only ingredient is ‘cocoa’.
